This wine has heaps of grunt and flavor and the classic firm tannin finish of great Cabernet Sauvignon wines.
VARIETAL: 100% Cabernet Sauvignon
REGION: Coonawarra, South Australia Coonawarra is famed for its ‘terra rossa’ - the red earth laid over limestone that is confined to a cigarshaped strip of land just 21km long and 2km wide. The region has pure underground water reserves and a long, cool ripening season which brings out the best in Cabernet Sauvignon grapes.
VINE TO GLASS: Vintage 2015 was excellent, with moderate conditions overall. Good fruit set and large bunches required thinning at veraison to maintain quality. Warm, dry days and cool nights in autumn produced optimum ripeness in Cabernet fruit. This fruit was grown on vines aged between 20 and 50 years. The wine was aged for 15 months in a mix of old and new American and French oak hogsheads.
TASTING NOTES: This wine has a beautiful deep red color and aromas of dark berries, cedar and spice with lifted oak character. The palate has dark, spicy berry fruits and firm tannin. Serve with lamb – roasted rack in spring, butterflied on the barbecue in summer and slow cooked shanks in winter.
